Ingredients:
- 2 large Beefsteak tomatoes
- 4-5 tablespoon purple onions
- 5 tablespoons of chopped chives or green onion
- 1-2 garlic cloves – very finely minced to puree
- 1 tablespoon of vinegar (white, white balsamic or apple cider)
- 1 tablespoon of yellow mustard
- ½ tablespoon of olive oil
Directions:
- Wash and slice Beefsteak tomatoes into thick slices
- Wash and chop purple onions and chives
- Finely mince garlic until pureed
- Mix vinegar, yellow mustard and olive oil together to create a dressing
- Place tomatoes on a plate, and garnish with above ingredients
